Sushi Business

Sushi may be the leading example of traditional foods made with cooked rice that are long-established in Japan.

The conventional view was that sushi could only be prepared by a professional sushi chef with ten years or more experience, but the sushi robots developed by Suzumo as the first in the world to reproduce the techniques of these professionals have made it possible for even amateur part-time staff to prepare sushi. Where previously people had no more than a few opportunities each year to eat such a luxury food, they now buy it casually in supermarkets or at Kaiten-Sushi( conveyor-belt sushi bars) and sushi enjoys popularity from children to the elderly.

What is more, sushi has now won renewed recognition as a health food both in Japan and abroad, and demand spreads farther and farther afield. A piece of sushi consists of "sharidama" (rice ball) and "neta" (sliced raw fish as topping),formation of the "shari-dama" is an especially important operation that requires careful attention. You may use the finest possible "neta" for your topping, but if the "shari-dama" is not carefully formed, it will detract from the full sushi experience. The best sushi of all, whether in nigiri-sushi or norimaki, is considered to be that in which the rice is gently formed, the grains unharmed, and then comes apart inside the mouth.

Focusing on the highlights of the sushi-making process, we have built up knowhow in washing rice, cooking rice, blending cooked-rice with sushi vinegar and forming the rice in the beautiful shape of sushi. The operation and maintenance of each unit of our equipment differs little from common consumer appliances and is readily left in the hands of part-time staff. All our equipment complies with Underwriters Laboratories, Inc. and US National Sanitation Foundation specifications for the North American market and with CE specifications for the European market.

Suzumo conducts active R&D in omusubi and bento (boxed meals), as well as in sushi and norimaki. Unsatisfied with the conventional cold omusubi and bento sold in Japanese convenience stores and in the face of consumer demand for omusubi and bento with fluffier rice, we have developed the omusubi forming machine and the rice weighing & serving machines using new technology to meet these consumer needs.

Demand for omusubi and bento is forecasted to spread from Japan, Taiwan and Korea throughout the world. When it does so, what will win over consumers will be the technologies best capable of forming and serving rice cooked for best flavor into the plump forms that consumers demand.

Striking out from such traditional ready-made foods as sushi, norimaki, omusubi and bento, we are also actively engaged in developing and productizing entirely new rice food products.

The hamburger, the sandwich and the pizza are recognized throughout the world as the popular foods of people everywhere, and we have reproduced these in rice with the development of riceburgers, rice sandwiches and rice pizzas, our original-idea rice food.

The rice burger has already broken out of Japan and established itself as a popular product in Korea, Taiwan, China and Southeast Asia.
